Knife Description

I've waited for this knife for almost a year to come in stock with a local (EU-based) seller. Shosui Takeda knives are a bit different from what we are used to, without proportional geometry and very thin blade profile. Takeda 270 gyuto is a large knife and it is suited for larger jobs. Despite the knife's size, it is light and very responsive with quite a bit of flex to it. Edge is ground to only 10 degrees, with double "S" bevel geometry for better food release. The older model was iron claded, while the new version is laminated with stainless steel to better protect the blade. The older model was also known to have worse food release due to patina forming on huge knife bevels and sticking to food.


Some patina on Aogami Super steel. The knife will be re-evaluated before shipping it out, cleaned, and sharpened.
