Kruška Gyuto OC100-wrought iron 215mm (8.5")
☐ NEW WITH IMPERFECTIONS
This knife is ideal for someone who is looking for a thicker gyuto (chef's knife). The core steel is OC100, which is very similar to Shirogami#2 steel and is laminated with nickel and wrought iron. Wrought iron will reveal an amazing pattern when polished on Japanese natural stones! The knife has been ground by Žiga, our master sharpener here at SharpEdge. The handle is made by Slovenian handle maker Žak Glinšek. He used olive wood and American walnut to make this beautiful octagonal handle.
This knife has no imperfections.
About The Maker
Timotej Kruška is a young Slovenian blacksmith who manufactures kitchen and utility knives inspired by the Japanese tradition of forging knives as well as locally sourced materials. He forges blades using steel manufactured in a Slovenian steel plant and makes handles mostly out of local wood. In addition to traditional Japanese blades, Timotej is also exploring iron-age metallurgy.
