The slim blade profile and hard powder Japanese steel provide a winning combination of smooth and long-lasting sharpness, precise cutting and comfortable and fast work. This steel is also easy to maintain and sharpen.

SG2 POWDER STEEL

The core of this knife is made of SG2 powder steel, which ranks among the very best of Japanese steels used for kitchen blades. Due to the composition and microstructure of the steel and its hardness of 62-63 HRC, it retains sharpness for a long period of time. This steel is easy to maintain and its high chromium content makes it rust-resistant. SG2, also known as Super Gold steel, is a powder steel manufactured in Takefu steel plant. It has a high content of carbon and chromium and is stainless.

  • Carbon (C): key element in steel. It gives steel the possibility to be hardened during the process of heat treatment. It reduces resistance to corrosion and makes steel brittle.
  • Chromium (Cr): strongly increases the corrosion resistance of steel, and to a certain level increases its hardness.
  • Molybdenum (Mo): increases the resistance to corrosion, it is frequently present in corrosion-resistant steel, and it helps maintain the hardness and the power of steel in case of temperature changes.
  • Vanadium (V): the key element in increasing the hardness of steel. It increases the possibility to have a sharper blade and maintains the sharpness for a longer period of time.
  • Manganese (Mn): improves the structure of steel and increases the possibility for higher hardening of steel.
  • Silicon (Si): increases the positive effects of carbon (C). It increases the hardness and the power of steel.

The SG2 Bunka Matte is forged by hand at the Suncraft smithery in the town of Seki, Japan.

Our return policy lasts 30 days. If more than 30 days have gone by since the day you received your order, unfortunately we can’t offer you a refund or exchange.
