33-layer Damascus  Santoku with visible traces of the hammer is another excellent product by Yoshida Hamono. Santoku knife has been designed primarily for cutting vegetables, fish and meat. It is a multi-purpose kitchen knife. A harder, forged core of the double-bevel blade, made of VG-10 steel with the hardness of 61 HRC is clad into 32 softer layers of stainless steel, which gives the knife an interesting Damascus pattern and protects it well against corrosion. The handle of the knife is made of mahogany, wood which is very resistant to moisture.
