BLADE SHAPES:
Petty: Petty is a small multi-purpose Japanese kitchen knife that can be used for peeling, mincing, paring and decorating food. It can be used on and off the cutting board. Due to its thinness, it's great for preparing smaller fish, deboning poultry and trimming meat.
Gyuto: Gyuto is the most versatile and useful blade shape in the modern kitchen. It has a wide profile with an extra height clearance for easy food transfer and tends to be fairly flat towards the heel, enabling easy and fast chopping on the cutting board. A pointed tip allows piercing and precise, delicate work. A slight curve between the tip and the midsection makes the belly great for rocking the blade back and forth when cutting. It can be used to prepare meat, fish, and vegetables.
Santoku: Santoku is the original Japanese multipurpose knife, most commonly used in Japanese home kitchens. This blade shape excels at all types of cutting and chopping on the cutting board. The blade has a gentle curve in the belly and is also good for rocking cutting techniques.
STEEL:
The heart of these knives are made of Aichi's AUS-8 stainless steel, which was hardened to around 60 HRC. AUS-8 steel is a popular Japanese steel from the Aichi steelworks that is incredibly resistant to rust, yet simple to sharpen. The steel contains high amounts of carbon (0.7-0.75%) and is also high in vanadium (0.10-0.26%) and molybdenum (0.10-0.30%). It also has a high percentage of chromium (14.5%), making the blade corrosion-resistant and increasing the hardness, durability and strength of the steel mix.
LAMINATION:
The blades consist of 3 layers of steel - the harder steel AUS-8 (60 HRC) and two layers of softer stainless steel. They are forged and welded together in what is known as a san-mai construction. This technique is used to protect the hard (but delicate) core from outside factors, such as rust and physical impacts, which could lead to breakage.
GEOMETRY:
The knives in the set have a double bevel (symmetrical) blade.
BLADE FINISH:
The blades have a high polish finish (also called migaki) and feature a beautiful wavy line, marking a point where different layers of steel meet and seamlessly blend into each other. The upper part of the blades bears a subtle signature of the smithy in kanji characters, which translate to “Senzo”, the name of the line of these knives.
HANDLE:
These knives were fitted with a yo-style, Western-type handle. The minimalist design of the blades is nicely contrasted by the pakka wood handle in black color. The pakka wood is extremely durable and wear-resistant and lends itself to a solid and comfortable grip. Suncraft made sure that this knife, while it retains a classic Western look, also packs an additional visual punch by adding three rivets. The handle will fit well in your hands for both the hammer and pinch grip.

Suncraft is a family company spanning four generations and specializing in the production of kitchen tools. The smithy was founded in 1948 and is located in a thriving manufacturing area of Seki in Gifu prefecture, where steelwork dates back to the times of the Samurai warriors.

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.
❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
